Dinner scramble

Here is a quick, easy and healthy dinner option for the whole family. On tonight's menu was sauteed chicken in a balsamic vinegar dressing, sugar snap peas and quinoa.

Super easy, super delicious and super good for you! Nothing wrong with that...

Today was jam packed full with school and interning. It is getting down to the wire now up here at school, but that just means I am right around the bend from being done!! Woo Hoo! After this semester I will start a full time internship (worth 15 class credits) that is required to be a minimum of 40 hours per week for 13 weeks. I am doing my internship with the City of St. Petersburg, in the Parks and Recreation Department and I am so excited to see what is in store for me. I am excited to get out of an office and into the field, I want to be outside and active, that is what I love to do.

Actually, if I really could choose my dream job, it would be to own a bakery. I have really been looking into doing this lately, I just don't know if I should go straight into it right after school and take out a small business loan, or if I should work at a company for a few years and build up some savings before I dive into entrepreneurship. I mean people say, "there is no better time than the present" but I just need to figure out what is best for not only me but for Morgan as well and for us together.

I know that it is a bit of a strange dream, but it is something that I am super passionate about and it makes me happy. What I would like to do is give people the experience of going to a small bakery, like in Europe, but with a healthy twist. To use only organic ingredients as well as create things that are better for you. So you can have your cake and eat it too, without tipping the scale in the process. I have got a few recipes started, so it is just building from there.


One of my absolute favorite recipes is home made croissants. I like to paint a bit of agave nectar over the tops to give them a little bit of a sweet glaze. Nothing better, let me tell you! I have also made them stuffed with chocolate and also with apple cinnamon. My mouth is watering just typing this..


I remember being asked as a child "what do you want to be when you grow up?" I always thought I wanted to be a singer or a veterinarian, and for a while I even wanted to be a dolphin trainer (which I still by the way think would be an awesome job!) But now that I am grown up, I want to be a pastry chef? Interesting how time changes how you see everything..
