Pumpkin Spice Muffins

Another super busy day today. My day today consisted of interning from 9-5, then to an intern appreciation dinner at 6, then straight to a Thanksgiving social for an organization I am in, LEAPS, at 7...whew! I am pooped! All I really want to do right now is take a looonng hot bubble bath, but my tub doesn't have a stopper :( It is time to get out of here, let me tell you!

Before I run off to bed I wanted to share a delicious recipe with you all that I made today, in the midst of my craziness. Which should tell you how fast and easy they are!

Pumpkin Spice Muffins = deliciousness!!!!
I took this recipe from a pumpkin bread recipe, but just made them into muffins to save some baking time...good idea huh?

serves 24

  • 3 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground nutmeg
  • 2 cups solid pack pumpkin puree
  • 1 cup vegetable oil
  • 1/2 cup chopped walnuts (optional)
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 3 cups white sugar
  • 2/3 cup water
  • 4 eggs

Directions - these are the directions for the bread, but if you would like to make the muffins, do everything the same, just disperse evenly into muffin cups (I suggest using an ice cream scoop) and bake for approximately 20-22 minutes or until tops are golden brown.

  1. Grease and flour three 7 x 3 inch pans. Preheat oven to 350 degrees F (175 degrees C).
  2. Measure flour, sugar, baking soda, salt, and spices into a large bowl. Stir to blend. Add pumpkin, water, salad oil, eggs, and nuts. Beat until well combined. Pour batter into prepared pans.
  3. Bake for approximately 1 hour.
