Turkey Chili and Cornbread Muffins

It is beginning to look a lot like Christmas out there! All the twinkly lights and the Christmas music is already starting to play on the radio and in all of the stores. Storefronts with misted snow on their windows, I can't help but get lost in all of the beauty. This is one of my favorite times of year. No, not because we get presents or anything, but because it is the time of year where everyone stops to think about others and we all come together, friends, family, loved ones, and just give thanks for all of the blessings we have in our lives.

Whatever happened to the true meaning of Christmas? When we didn't all think about how many presents were under the tree? But when we looked around and appreciated everything we already had and were able to just enjoy being with our friends and family. Where we celebrated the birth of Jesus Christ and the beginning of his time here on Earth. He sacrificed everything for us, but now we are all caught up in the world. This year I am celebrating the spirit of Christmas with loved ones and the reminder that Jesus died for me...I want to give thanks for all of the blessings that I have and even though times are hard, there is still much to be thankful for!

Besides that here is a look at some yummy turkey chili I made for dinner along with some corn bread muffins! The best thing about this recipe is definitely the plethora of left overs you will have afterwards...

Turkey Chili

1 pound of ground turkey
1 16oz can of tomato sauce
1 large can of red kidney beans
1 small can of white kidney beans
1 packet of Publix chili seasoning

1. Brown ground turkey over medium heat
2. After meat is cooked, add in sauce, beans, and chili seasoning; bring to a boil
3. Reduce heat to medium, cover, and let simmer for 10-15 minutes

Get in my belly!
 The icing on the cake for this simple meal is some corn bread muffins. Just but one back of muffin mix, and wahlah!

Top with some fresh mozzarella cheese and DIG IN!
