Nutrient Boost Week :: Gazpacho

As you know, I have dedicated the next 90 days to the Tracy Anderson Metamorphosis workout and diet program. Yes, I might alter the eating plan a bit, since I am not looking to lose an extreme amount of weight or anything, but what I would really like to get out of this is to make my body as healthy and as lean as possible.


This week is Nutrient Boost Week, consisting of a number of high nutrient (mostly liquid) meals to shock the body from its usual pattern of burgers, fries and pizza. Yes, I do eat healthy most of the time, but I have the biggest sweet tooth known to man as well as just love junky food. This process is hopefully going to settle my little cookie monster I have running around in my tummy, and turn it in to a lean, green, healthy eating machine.

On the menu for lunch today is the Gazpacho, a yummy mixture of spices and veggies. Not too exciting, but remember this week is all about flushing those toxins from the body.

Gazpacho
Ingredients:
1 1/2 cups roasted tomatoes
2 Tbsp parsley
12 chives
2 Tbsp cilantro
Juice of 1/2 lemon
2 Tbsp rice vinegar
Pinch paprika
Pinch black pepper
1/8 red onion
1/2 cup mixed bell peppers
1/4 cucumber

Directions:
Pulse all ingredients in a food processor until vegetables are mostly pureed. This will make approximately 2 11oz servings.
