Veggie-Protein Soup

It's Thursday! Yesterday was a great day, sticking with my diet and exercise program all day. I did eat some real food for dinner, seeing as my tummy was growling so loud, I think the neighbors could hear it roar. But freshly cooked chicken (5 oz) and a handful of sauteed asparagus can't be too bad for you, right? Just kidding, it was delicious and of course super healthy.

My two favorite items on Tracy Anderson's Dynamic Eating Plan for the first week are definitely the Blueberry applesauce and the veggie-protein soup. The soup is packed with powerful antioxidant-rich vegetables and a little bit of fresh boiled chicken to give you that protein your body so desperately needs.



A really yummy and super healthy meal, great for lunches!

Veggie-Protein Soup
Ingredients:
1/2 cup peeled and chopped carrots
1/2 cup chopped celery stalk
2 oz boneless chicken breast, cubed or 2oz of tofu, cubed
2 cups low-sodium chicken broth, or 2 cups low-sodium vegetable broth
1/2 cup chopped broccoli spears
2 Tbsp chopped fresh parsley
Fresh cracked pepper

Directions:
Simmer the carrots, celery, and chicken or tofu in the stock gently for 20 minutes, then add the chopped broccoli and cook for an additional 10 minutes. Add the parsley, season with black pepper, and serve.
 
Makes three 8 oz servings
