Paleo Diet Challenge

And challenge is an understatement. I am NOT a diet person by any means and this past week proves it. Kudos to any of you out there who actually can stick to the Paleo diet, but it is definitely not for me. I like dairy and pasta far too much to do this on a regular basis. However, I must say that it felt absolutely amazing not eating processed foods and I definitely plan on sticking to a few of these principles from now on, because I just overall feel better about myself and my body.

Here was my food journal from the week:

Monday : 1/20
Breakfast: 2 eggs & coffee
Lunch: Salad with tons of veggies and chicken
Snack: Cherries & a banana
Dinner: Chicken with tons of veggies (carrots, green peppers, snow peas, peas, spinach) cooked in olive oil

Tuesday : 1/21
Breakfast: 2 eggs, banana & coffee
Lunch: Large salad w/ chicken
Snack: 2 bananas & a handful of grapes
Dinner: turkey loaf, corn, & broccoli
Dessert: CHEAT!! ice cream

Wednesday: 1/22
Breakfast: coffee (bad girl didn't eat breakfast) + water
Lunch: Salad w/ apple slices + water
snack: banana
Dinner: Mahi mahi, green beans and wild rice + water

Thursday: 1/23
Breakfast: coffee & plain oatmeal w/ cinnamon
Lunch: apple slices
Snack: Trail mix
Dinner: sweet potato and green beans
Dessert: granola bar

Friday: 1/24
Breakfast: coffee, 2.5 eggs
Lunch: Chicken chopped salad from Subway + water
Snack: half a sweet potato
Dinner: chicken, tomato & spinach pizza

So as you can see I didn't even make it through one whole week eating just from the Paleo rules, but overall I think I did pretty well. To me it is more about living and eating clean. I want to be as healthy as possible to set a good example for my kids and so that I have the energy to keep up with them for as long as possible. Eating healthy and exercising on a regular basis is my plan for the foreseeable future, but this was fun to try.

If any of you out there are strict Paleo people, I have mad respect!!
